Greens and Tings: Crispy Collard Stuffed Fufu

An African Influenced Recipe from Chef Vicky V – The Queen of Yum (@thequeenofyum) and Jazzmine Woodard (@dashofjazzblog).

Ingredients

  • 1 Can of Glory Collards (Drained)
  • 8 Oz Portion of Prepared Fufu (Cut Into 6 Equal Pieces)
  • 1/3 Cup of Suya Spice
  • 2 Cups All Purpose Flour
  • Oil For Frying

Directions

  1. Place your Glory Collard Greens in a large mixing bowl and combine with 1Tlbs of Suya Spice. Set to the side.
  2. Place flour and remainder of Suya spice in a container and mix well. Make sure the container is large enough to roll the fritters.
  3. Using your flour mix lightly powder the surface of your work space and your hands.
  4. Take a portion of the cut fufu and using your hands and fingers, flatten and spread it out. You can also use a rolling pin but make sure it is heavily dusted with flour. The flattened dough should not be too thin.
  5. Take a tablespoon of your greens mix and put it in the center of your fufu. Close your dumpling by bringing edges together and pinching. Then, place the ball in your container with your flour mixture. After you have formed all of your balls shake your fufu balls around to ensure they are coated with flour.
  6. Heat your oil to medium high. Fry your dumplings until golden brown and crispy. Sprinkle with extra Suya spice to finish.
