Tomato, Okra & Corn Fritters

Ingredients

  • 1 cup cornmeal
  • 1/2 cup all-purpose flour
  • 1 tsp. baking powder
  • 1/4 tsp. black pepper
  • 1/2 cup buttermilk
  • 1 large egg
  • 1 (15-oz.) can Glory Foods Reduced Sodium Tomatoes, Okra and Corn; drained
  • 1 quart vegetable oil
  • 1 tablespoon chopped fresh parsley, for garnish
  • 1 cup mayonnaise
  • 2 tbsp hot sauce

Directions

  1. In a large bowl, combine the cornmeal, flour, baking powder, and black pepper.
  2. In a separate small bowl, whisk together the buttermilk and egg until smooth. Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in Tomatoes, Okra and Corn.
  3. Heat oil in a deep skillet over medium-high heat. Drop 2 tablespoon-sized portions of the batter into the hot oil in batches, shaping them into fritters. Fry, flipping halfway through, until golden-brown, about 2-3 minutes per side. Transfer the fritters to a paper-towel-lined plate to drain.
  4. Combine mayonnaise and hot sauce in a small bowl until smooth. Garnish fritters with parsley, and serve with spicy mayonnaise.
