Spring Pasta Salad

A combination of easy and inexpensive ingredients for the perfect summer time recipe.

Ingredients

  • 14 oz dried pasta of any shape (not spaghetti)
  • 2 tablespoons extra virgin olive oil; divided
  • 3-4 agreed onions; sliced thin
  • 2 cloves garlic; minced
  • 1 bunch thin asparagus (top 2/3 only); chopped
  • Salt & pepper to taste
  • 1 (10 oz) bag fresh baby spinach
  • 1 (14.5 oz) can Glory Foods Seasoned Great Northern Beans
  • 1/4 cup Ranch dressing
  • 1 teaspoon fresh lemon juice
  • Freshly grated Parmesan for serving

Directions

  1. Boil pasta according to box directions; drain and stir in 1 tablespoon olive oil.
  2. In a large (high-sided) skillet, heat remaining olive oil and stir in green onions, garlic and asparagus.
  3. Sauté for 3-4 minutes over low heat then season with salt & pepper.
  4. Add spinach and cook until just wilted then stir in beans (do not drain).
  5. Cook another minute or two to warm beans then add mixture to the pasta along with ranch dressing and lemon juice. Stir well to incorporate.
  6. Serve with Parmesan cheese on the side.
