Southwest Yellow Bell Peppers

These stuffed peppers feature our Seasoned Black Beans and are sure to be a hit. Enjoy!

Ingredients

  • 2 large yellow bell peppers; sliced in half lengthwise (seeds removed)
  • 5 red jalapeno peppers
  • 2 tablespoons plus 1 teaspoon olive oil; divided
  • 1/3 lb ground turkey
  • 2 tablespoons chopped white onion
  • 1 clove garlic; minced
  • 1/2 teaspoon poultry seasoning
  • 3/4 cup (from a 15 oz can) Glory Foods Seasoned Black Beans
  • 1/3 cup shredded Monterey Jack cheese
  • Dried cilantro for sprinkling
  • 4 teaspoons dairy sour cream
  • 1 teaspoon fresh lime juice
  • 1 teaspoon freshly grated lime zest

Directions

  1. Prepare grill to medium heat.
  2. Rub the bell peppers and 4 of the jalapeño peppers with a teaspoon of oil.
  3. Slice the remaining jalapeño into thin circles; set aside.
  4. Heat the remaining oil in a small skillet and fry the ground turkey for a few minutes until no longer pink. Stir in the onion, garlic and poultry seasoning; cook 30 seconds more. Transfer to a mixing bowl and stir in black beans.
  5. Divide the mixture between the 4 bell pepper halves and scatter with cheese.
  6. Grill (with the lid closed) for 6-7 minutes until peppers start to soften.
  7. Grill the remaining jalapeños alongside the stuffed bell peppers, turning them occasionally.
  8. Stir together all ingredients for the sour cream-lime drizzle.
  9. To serve, place stuffed bell pepper halves onto a small plate along with a whole grilled red jalapeño and fresh lime wedge. Top stuffed peppers with a few raw red jalapeño rings, sprinkle with dried cilantro and drizzle with sour cream-lime mixture.
