Watermelon, Cucumber & Black Bean Salad

A powerful combination that provides antioxidants. fiber, and protein, this Watermelon, Cucumber, & Black Bean Salad is sure to please.



  • 1 (10 oz) bag baby spinach; rinsed
  • 1-1/2 cups cubed cold seedless watermelon
  • 1-1/2 cups diced hot house (or Persian) cucumber
  • 1 (15 oz) can Glory Foods Simply Seasoned Black Beans; drained
  • 4 ounces crumbled goat cheese
  • 2 ounces toasted (shelled) pistachio nuts
  • 1/4 cup olive or grape seed oil
  • 2-1/2 tablespoons apple cider vinegar
  • 1-1/2 tablespoons fresh orange juice
  • salt & pepper to taste


  1. Place all salad ingredients in a large, chilled bowl.
  2. In a separate (small) bowl, whisk together the dressing ingredients.
  3. Pour dressing over salad and toss to coat.
  4. Serve with fresh crust bread and butter, if desired
