Quinoa Butterbean Cakes w/ Marinara Sauce

Quinoa is gluten-free, high in protein and one of the few plant foods that contain all nine essential amino acids. This recipe pairs nutritious quinoa with our Seasoned Butterbeans to make some tasty fried cakes.

Ingredients

  • 1 (15 oz) can Glory Foods Seasoned Butterbeans; drained and smashed
  • 2 cups cooked quinoa
  • 3 whole eggs; beaten
  • 1 cup plain breadcrumbs
  • 1/3 cup finely grated carrot (excess liquid pressed out)
  • 1/4 cup shredded Parmesan cheese
  • 3 tablespoons finely grated onion (excess liquid pressed out)
  • 2 tablespoons freshly choped parsley
  • 1 teaspoon red pepper flakes
  • 1 teaspoon grated lime zest
  • Oil for frying
  • 1 jar purchased marinara sauce

Directions

  1. Combine all ingredients in a large bowl; mix well.
  2. Cover and refrigerate mixture for a minimum of 4 hours (or overnight).
  3. Form into 12 patties and fry for 2-1/2 minutes per side until golden brown.
  4. Spoon with marinara sauce before serving.
  5. Quinoa cakes are excellent served over a crisp green salad.
