New Year’s Good Luck Blackeye Peas

Ingredients

  • 1 tablespoons butter
  • 1/3 cup diced white onion
  • 1 rib celery; diced
  • 2 cloves garlic; minced
  • 2 teaspoons Cajun seasoning
  • 1/4 cup carrot juice
  • 1 (5.5 oz) can tomato or V-8 juice)
  • 2 (14.5 oz) cans low sodium chicken broth
  • 2 (14.5 oz) cans Glory Seasoned Blackeye Peas (do not drain or rinse)
  • 1-1/4 cups cooked (shredded or cubes) ham
  • 1-2 teaspoons fresh lemon juice

Directions

  1. Melt beet in a large saucepan and sauté onion, celery and garlic over low heat for 3-4 minutes. Stir in seasoning, carrot juice and tomato juice and increase heat to medium.
  2. Add chicken broth, black eye peas and ham; allow to simmer for 20 minutes. Remove from heat and stir in lemon juice.
  3. Serve with cornbread, if desired.
