Mary Frances’ Chocolate Collard Green Cupcakes

Congratulations and Applause to Mary Frances for winning the Publix Tampa Bay Collard Green Festival of 2021!

She swept the competition with her Glory Seasoned Collard Greens-based chocolate cupcakes and we are thrilled to be a part of the action. Mary’s culinary prowess was fine-tuned by GiGi’s Playhouse (Tampa Chapter) and we are happy to share her recipe with you.

Ingredients

  • CUPCAKES
  • 14.5 ounce Glory Foods Seasoned Collard Greens
  • 1 box Devil’s Food Cake Mixture
  • 1 Cup of Applesauce
  • 3 Eggs
  • FROSTING
  • 1 8oz. Package of Cream Cheese - Room Temperature
  • 5 tbsp. Butter - softened
  • 1/2 Cup Cocoa Powder
  • 4 Cups Powdered Sugar

Directions

  1. Preheat oven to 350F
  2. Drain seasoned collard greens, add fresh water and drain again
  3. In a blender, add collard greens, applesauce and 1/2 cup water.
  4. Blend greens and applesauce until completely mixed.
  5. Pour mixed greens and applesauce mixture into a large mixing bowl.
  6. Add eggs and cake mix, mix thoroughly.
  7. Pour batter into muffin pan lined with paper liners. Fill 24 cups about 2/3 full.
  8. Place in oven and bake about 16-18 minutes.
  9. Let Cupcakes Cool. Stir Frosting Ingredients until smooth and Frost Cupcakes.
  10. Store in refrigerator until ready to eat.
