Keto Baked Eggs with Greens

A keto twist on a breakfast favorite. Baked eggs with greens, bacon and sweet peppers creates a flavorful experience for any time of day.

Ingredients

  • 6 slices bacon; diced
  • 4 teaspoons butter
  • 2 (15 oz) cans Glory Foods Simply Seasoned Mixed Greens; drained well
  • 1 teaspoon fresh lemon juice
  • 1/2 cup crumbled Feta cheese
  • 1 yellow or red sweet bell pepper; cut into rings
  • 4 whole (room temperature) eggs
  • pinch dried marjoram (or dried parsley)

Directions

  1. Heat oven to 400 degrees F.
  2. In a large skillet, fry bacon until crisp and fat has rendered; stir in mixed greens and lemon juice.
  3. Place 1 teaspoon butter into the bottom of 4 oven proof ramekins.
  4. Divide bacon/ mixed greens and spoon onto the pat of butter.
  5. Scatter with Feta and a few pepper rings.
  6. Carefully crack an egg into the center, sprinkle with marjarine
  7. Bake for 15 minutes or until the egg whites have set.
