Green Bean and Lentil Soup with Carrots

A tasty delightful soup for any time of year that is highlighted by our Glory Foods Seasoned Green Beans.

Ingredients

  • 2 tablespoons butter
  • 1/3 cup finely diced white onion
  • 2 cloves garlic; minced
  • 1 large carrot; peeled and diced small
  • 1 inner stalk celery; diced small
  • 1 heaping tablespoon (from a 2 oz packet) dry onion soup mix
  • 3 (14.5 oz) cans reduced sodium chicken broth
  • 1 (27 oz) can Glory Foods Seasoned Green Beans
  • 1 cup pre-cooked green lentils
  • 2/3 cup finely chopped kale (inner stem removed)

Directions

  1. Melt butter in a Dutch oven or heavy soup pot.
  2. Stir in onion, garlic, carrot, celery and soup mix.
  3. Cook, stirring constantly, for 3 minutes, then pour in chicken broth.
  4. Place green beans in a power blender and process until smooth; add to soup along with lentils and kale.
  5. Reduce heat to low and simmer for 30-40 minutes.
  6. Divide between 4 warmed soup bowls and serve with crackers, if desired.
