Good Luck Blackeye Peas Soup

Enjoy on New Year’s Day or anytime you want a good, hearty dish. Use Glory Foods Seasoned Blackeye Peas or our Reduced Sodium Blackeye Peas.

Ingredients

  • 1 tablespoon unsalted butter
  • 1/3 cup diced white onion
  • 1 rib celery; diced
  • 2 cloves garlic; minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon paprika
  • 1/4 cup carrot juice
  • 1 (5.5 oz) can tomato juice
  • 2 (14.5 oz) cans reduced sodium chicken broth
  • 2 (14.5 oz) cans Glory Foods Seasoned or Glory Foods Reduced Sodium Blackeye Peas (do not drain or rinse)
  • 1-1/4 cups cooked (shredded or cubes) ham
  • 1-2 teaspoons fresh lemon juice

Directions

  1. Melt butter in a large saucepan over medium-low heat. Add onion and celery, and cook until just tender, about 3-4 minutes.
  2. Add garlic, and cook until fragrant, about 1 minute. Stir in chili powder, onion powder, oregano, paprika, carrot juice and tomato juice, and increase heat to medium.
  3. Add broth, Blackeye Peas and ham, and bring mixture to a simmer. Simmer for 20 minutes, until slightly reduced and heated through.
  4. Remove from heat and stir in lemon juice. Serve with cornbread, if desired.
