Ingredients
1 tablespoon unsalted butter
1/3 cup diced white onion
1 rib celery; diced
2 cloves garlic; minced
1 teaspoon chili powder
1/2 teaspoon onion powder
1/4 teaspoon dried oregano
1/4 teaspoon paprika
1/4 cup carrot juice
1 (5.5 oz) can tomato juice
2 (14.5 oz) cans reduced sodium chicken broth
2 (14.5 oz) cans Glory Foods Seasoned or Glory Foods Reduced Sodium Blackeye Peas (do not drain or rinse)
1-1/4 cups cooked (shredded or cubes) ham
1-2 teaspoons fresh lemon juice
Directions
Melt butter in a large saucepan over medium-low heat. Add onion and celery, and cook until just tender, about 3-4 minutes.
Add garlic, and cook until fragrant, about 1 minute. Stir in chili powder, onion powder, oregano, paprika, carrot juice and tomato juice, and increase heat to medium.
Add broth, Blackeye Peas and ham, and bring mixture to a simmer. Simmer for 20 minutes, until slightly reduced and heated through.
Remove from heat and stir in lemon juice. Serve with cornbread, if desired.
