Corned Beef and Cabbage Hash

Ingredients

  • 2 tbsp. vegetable oil
  • 2 medium yellow potatoes; peeled and diced into 1/2-inch pieces
  • 1 large yellow onion; finely chopped
  • 2 cups cooked corned beef brisket; diced
  • 1 (15oz.) can Glory Foods Country Style Cabbage
  • 1 tsp. dried thyme
  • 1 tsp. paprika
  • 1 tsp. salt
  • 1/2 tsp. garlic powder
  • 1/2 tsp. black pepper
  • Chopped fresh parsley; for garnish

Directions

  1. Heat oil in a large skillet over medium heat. Add the potatoes and onions and cook, stirring occasionally, until the potatoes are golden-brown and the onions are translucent, about 5 minutes
  2. Add the corned beef and cook until fully heated through, about 3-4 minutes. Stir in the cabbage, and season with thyme, paprika, salt, garlic powder and pepper.
  3. Cook until cabbage is heated through and potatoes are tender, about 5-7 minutes. Garnish with parsley, and serve.
