Chicken & Pinto Bean Quesadillas

Ingredients

  • 6-8 inch (from a 17.5 oz package) soft flour tortillas
  • 1 (14.5 oz) can Glory Foods Seasoned Pinto Beans w/ Onions; drained
  • 2 (4.5 oz) cans premium canned chicken; drained well
  • 1 small red jalapeño (plus extra for grilling); seeded and minced
  • 1 teaspoon fresh lime juice
  • 2/3 cup shredded Mexican cheese blend
  • 1/2 cup prepared guacamole
  • Fresh cut limes and sour cream for serving, optional

Directions

  1. Prepare grill to medium heat.
  2. Lay out 3 tortillas on work surface.
  3. In a bowl, stir together the pinto beans, chicken, jalapeños and lime juice.
  4. Divide evenly among the 3 tortillas and follow with a scattering of cheese.
  5. Spread guacamole on the remaining 3 tortillas and top (guac side down) filled tortillas. Press gently down and grill for 2-2 1/2 minutes per side.
  6. Rub extra jalapeños with a small amount of oil and grill alongside the tortillas, if desired.
