      • 1 (15 oz) can Glory Foods Reduced Sodium Cream Style Skillet Corn
      • 1 ½ cups cornmeal mix (self-rising)
      • 1 cup buttermilk
      • 2 large eggs, lightly beaten
      • ½ cup butter, melted and divided (¼ cup for batter, ¼ cup for drizzle)
      • 1 lb crawfish tails, cooked and drained
      • 1 small onion, finely diced
      • ½ small bell pepper, finely diced (red or green)
      • 1 jalapeño, seeded and finely diced (optional for heat)
      • 2 cloves garlic, minced
      • 1 tsp No-Salt Creole Seasoning
      • ½ tsp smoked paprika
      • ¼ tsp black pepper
      • 1 cup shredded cheddar cheese
      • ½ cup shredded pepper jack cheese
      • 1 Tbsp honey (for finishing)
      • 1 Tbsp chopped green onions (for garnish)

      Instructions:

      • Preheat oven to 375°F. Butter or spray a 9x9 baking dish or cast-iron skillet.
      • Sauté the onion, bell pepper, and jalapeño in 1 tablespoon butter until softened and fragrant (3–4 minutes). Add the garlic and cook another 30 seconds. Remove from heat.
      • In a large bowl, combine cornmeal mix, No-Salt Creole Seasoning, smoked paprika, and black pepper. Whisk to blend.
      • Add Glory Foods Reduced Sodium Cream Skillet Corn, buttermilk, eggs, ½ cup melted butter, and sautéed vegetables. Stir until just combined.
      • Fold in crawfish tails and cheeses. Pour batter into prepared dish.
      • Bake for 35–40 minutes, or until golden on top and a toothpick inserted in the center comes out clean.
      • Finish by drizzling with 1 tablespoon melted butter mixed with 1 tablespoon honey for a sweet heat glaze.
      • Garnish with green onions and serve warm.
