Black Eyed Pea Dahl
An Indian/ South Adian Inspired Recipe from Chef Vicky V – The Queen of Yum (@thequeenofyum), and Tasnim Haleem (@haleem.htx).
Ingredients
1 Can Glory Foods Seasoned Blackeye Peas
1 Onion (diced)
Salt & Pepper to Taste
4 Garlic Cloves, (minced)
1 Nob of Fresh Ginger (peeled & minced)
1/2 Tsp Paprika
1/2 Tsp Cumin
2 Tsp Garam Masala
1/2 Tsp Ground Coriander
2 Tsp Turmeric
1 Can Diced Tomatoes
1 Can Coconut Milk
Lime For Garnish
Parsley and Cilantro to Garnish
Directions
Heat a large frying/sauté pan over a medium heat.
When the pan is hot, add the oil.
Add onions and season with salt. Cook for around 5 minutes, stirring often, until softened.
Add the garlic and ginger.
When onion becomes translucent, add in your spices: cumin, garam masala, ground coriander and turmeric.
Add Blackeye Peas, tomatoes, and coconut milk and a generous helping of salt and pepper to season. Mix all ingredients well.
Let simmer for 15-20 min.
Serve over steamed or buttered rice
