Our Cabbage & Potato Frittata is a perfect dish to add a #RealSouthernStyle twist to your St. Patricks Day festivities.🍀

Glory's Cabbage and Potato Frittata

Ingredients
3 tbs. olive oil
1/3 cup onion, diced
8 large eggs, room temperature
1/3 cup heavy cream, warmed slightly
1 tsp. dried parsley
1 tsp. white pepper
1/2 tsp. salt
1 (15 oz.) can Glory Foods Country Cabbage; drained (excess liquid pressed out)
1 (14.5 oz.) can sliced new potatoes; drained and roughly chopped
1/2 cup shredded cheese of your choice; optional

Directions
- Heat oven to 350°F.
- Heat olive oil in a 9” cast iron skillet (or other heavy, oven proof skillet) and sauté
onion for 2 minutes until fragrant.
- In a large bowl, whisk the eggs with the cream, parsley, white pepper and salt. Stir
in the cabbage and the potatoes and pour over the onions in the cast iron skillet.
- Cook on medium-low for 5 minutes until the edge starts to pull away from the
sides of skillet. Transfer to oven and bake for 20-25 minutes until set. If using
cheese, sprinkle onto the frittata 5 minutes before removing from oven.
- Allow to cool 5 minutes then cut into wedges.

Try this #RealSouthernStyle twist on a delicious West African dish!

This Crispy Collard Fufu recipe from Chef Vicky V (@thequeenofyum) and Jazzmine Woodard (@dashofjazzblog) is a #GloryUs way to experience world cuisine.

Greens and Tings: Crispy Collards Fufu

Ingredients
1 Can of Glory Collards (Drained)
8 Oz Portion of Prepared Fufu (Cut Into 6 Equal Pieces)
1/3 Cup of Suya Spice
2 Cups All Purpose Flour
Oil For Frying

Directions
- Place your Glory Collard Greens in a large mixing bowl and combine with 1Tlbs of
Suya Spice. Set to the side.
- Place flour and remainder of Suya spice in a container and mix well. Make sure the
container is large enough to roll the fritters.
- Using your flour mix lightly powder the surface of your work space and your hands.
- Take a portion of the cut fufu and using your hands and fingers, flatten and spread it
out. You can also use a rolling pin but make sure it is heavily dusted with flour. The
flattened dough should not be too thin.
- Take a tablespoon of your greens mix and put it in the center of your fufu. Close your
dumpling by bringing edges together and pinching. Then, place the ball in your
container with your flour mixture. After you have formed all of your balls shake your
fufu balls around to ensure they are coated with flour.
- Heat your oil to medium high. Fry your dumplings until golden brown and crispy. - Sprinkle with extra Suya spice to finish.

Glory's Never Fail Frittata Bites

Ingredients
1 (27 oz.) can Glory Foods Seasoned Kale Greens, drained
8 eggs
1/2 Spanish onion, diced
1/2 tsp. dried thyme
1/2 tsp. sea salt
1/4 tsp. ground black pepper
1 tbs. all-purpose flour
3 tbs. olive oil
1/2 cup goat cheese, crumbled

Directions
- Preheat oven to 375°F.
- Grab a large mixing bowl and whisk eggs. Add the Glory Foods Seasoned Kale
Greens, onions, thyme, black pepper, salt, and flour to the eggs and combine
thoroughly.
- Brush the cups of a 24-cup mini muffin baking tin with olive oil.
- Pour the kale frittata mixture evenly into the muffin tins, leaving a little room at the
top.
- Top each cup with crumbled goat cheese.
- Bake until the center is set and golden brown (approximately 10-15 minutes).
- Remove from the oven and serve warm.
